The tomato (Lycopersicum esculentum), as well as the excessively vegetables ones, represents an important source of indispensable nutrients for the man. Innumerable they are the varieties that take care of the most different demands, since the industrial varieties, represented for a bigger parcel, until the varieties of table. Currently, in the Brazilian conditions of commercialization, all the varieties present a common trace, since in none in case that it is proceeded to the improvement in terms to increase the useful life or of shelf, in the case of tomatoes for consumption in natura. In other words, the commercialization of the tomato does not foresee, in our conditions, no additional treatment for its conservation after-harvest, as for example the refrigeration use. This type of commercialization causes many losses, as much in the amount as in the product quality. One among others gives credit that the maintenance of the characteristics of quality of a selected product is only possible with the refrigeration use, treatments after-harvest, in order to draw out its useful life or of shelf. In this direction, it is intended to study the best conditions of refrigeration to cultivate of tomato "Débora", whose fruits will be evaluated, in a first stage, comparing itself the storage in the room cooling system and forced forced air-cooling, through parameters gotten from analyses physicist-chemistries. As the tomato is in the group of the sensible vegetable to the cold, it will also be become fullfilled, in one second stage, a treatment of intermittent warming, with the objective of if diminishing the actual damages for the low temperatures of storage. One expects that, with the treatments that will be applied the fruits, if it obtains to draw out the time of useful life of the selected variety, aiming at the best maintenance of the product quality.
